Imperial stout secondary additions

    So, I'm working on putting the finishing touches on a 4 keg keezer. Since I started the project, I haven't brewed anything other than a 5 gallon batch of imperial stout that should be ready later next month. I figured since I'll have these open kegs I might experiment and split this batch among 3 or 4 kegs with various additions within the secondary (coffee, vanilla, bourbon etc.). I have yet to stray too far from recipes yet, so any suggestions/recommendations on what and when to add, would be greatly appreciated.

    I'm a fan of the Nibs and the Vanilla personally.

    I've got a big RIS that's in secondary now on 3 madagascar vanilla beans, 3 oz of chocolate nibs and shells, and 2 oz of PVW bourbon oak chips.

    I figure next week I'll taste it and see where it's at. It'll be a while to age, it's at 11.5% ABV.


    Try stuff that you like.. if you like the spice, the Chili and Chocolate pair together really well.

    Mexican chocolate probably, the slight heat really goes nicely with the roasted grains. They were are really good, but that was was the most unique (inspired by Cigar City Hunahpu's).

    I have one in the works right now. Aging on cacao nibs that were soaked in bourbon. Added the nibs and the bourbon to the stout in the secondary.

    The additions were more of an afterthought so which additions do you guys think would work best with about a month or less in the secondary?

    1 to 2 oz of oak chips would be good for your time frame. Since you're splitting the batch, you could soak some in bourbon for one and add them plain in another. Plain light toasted American oak chips added a nice subtle character to my imperial stout.
