IPA for July 4th - kviek or traditional

    So I haven’t brewed in like Hosting July 4th and would like an ipa on tap. By the time I get everything ready realistically I can brew early next week. That gives me 15 days. I usually like more time. Since it’s been awhile I was curious how kviek strains have been with WC ipas. Anyone have good luck and if so what strains?

    Is kviek the better option or an ipa in 15 days?

    Yes.
    They will definitely give you beer that is ready to be on tap in that time frame. They are fast, and don't care about being pitched at 98ºf.
    I've had some good success with them for Ipa related, and smaller ale beers.

    A kviek strain will definitely work. A lot of folks used to complain about mouthfeel with them, but I never noticed. Some English strains would also work, but you'd probably have to do a more complicated fermentation schedule to have it ready in time. With the kviek, you just cool to 75-80, pitch, ferment at room temp, cold crash and force carbonate.

    If you haven't already, start now. Aim for a more sessionable ABV. Pitch with two packs. Most guests will care more that you brewed something for the occasion than any flaws if the vibe is good and you have good food. A big FO addition will do more for you than dry hopping on this time frame, but you should still try to dry hop. As much as I hate to say it, use Mosaic and/or Citra, because they are the autotune hops. Let us know how it turns out.
