Is 50 degrees too low to age beer?

    Is 50 degrees too low to age beer?

    I've had my old refrigerator set at 55 degrees and liked the results but am looking at a new (wine) fridge that inly goes up to 50.

    It's fine. But if you must, you can get a temp control unit to raise the temp. Search in this forum, a few threads about it.

    Firestone Walker actually reccomends 46° on all of their bottles.

    The beer will just age slower at the lower temp

    Nope, before I got myself a temperature controller, I had my fridge set at the highest it would go, and it'd hover between 42 & 45. Didn't see any side effects, just slows the ageing process, and that's not a bad thing!

    I actually had the opportunity to ask Mitch Steele – Stone Brewmaster – about this last summer. I had been shooting for 55° since that's what it says on so many of the Stone Brewing Co. bottles. He said colder is better; don't freeze it. I suppose there are exceptions. I asked a general question and got a general answer… But I've been colder, more like around 38° since then. So far, so good.
