I'm looking for a wheat recipe along the lines of , boulevard unfiltered wheat, schlafly's wheat, the only beer my wife and I both have in common and like. she wants me to brew something like them. I'd appreciate a recipe if anybody has one
i brewed a wheat similar to bells oberon..just made it tonight so I can't give any feedback on how it is but pm me if you're interested in that at all.
Kent's Hollow Log from Brewing Classic Styles by Zainasheff and Palmer works well for me as far as a solid American unfiltered wheat. I've brewed this beer twice with lots of love from wheat fans. OG: 1.052 FG: 1.012 ABV: 5.3% Extract 8.9 lbs DME Wheat Malt Willamette 5% 60 min Willamette 5% 0 min Cetennial 9.0% 0 min "This recipe has a touch more hop character than many bottled, commercial examples on the market, but a lot less than some examples you might find. If you want less hop character, feel free to drop the late hop editions." White Labs WLP320 or Wyeast 1010 or Safale US-05 All Grain: 6 lbs 2-Row 6 lbs Wheat malt Mash 60 min at 152oF
I've got a house american wheat that goes over very well. 50% wheat 50% 2- row to 1.050 Magnum at 60 to about 25 IBUs 1 Oz/5g of Cascade at about 5 minutes US 05 This is a beer you can turn quick.
One of the biggest issues you need to figure out is yeast and temp control. A lot of German wheat yeasts will produce a banana milkshake if you let them get too warm.
Might I suggest a not-so-conventional yeast for a wheat? Brewing partner used WLP029 German Ale/ Kölsch Yeast in his last wheat, and it is damn good.
I might try that yeast....going to brew a wheat in a week or 2. Haven't decided on a recipe yet either.
If you can get your hands on 5oz Amarillo - do a Gumballhead clone... just did this beer 3 weeks ago, bottled on Saturday. Would have drank the entire uncarbed room temp bucket's worth if I could. Tastes awesome. http://quacktownbrews.blogspot.com/2012/05/3-beers-1-mash-good-deal.html For extract plug Wheat DME into your brewing software in place of Pale Malt and Flaked Wheat. Damn good. You can remove the 45 minute addition and add it to KO or DH if you'd like to back off on the bittering, even the FW hops. Keep in mind that the recipe was built for 81% efficiency on an 11 gallon batch.
Sorry, I changed my blog's URL and name so the above link no longer works. New link: http://endofsilencebrewing.blogspot.com/2012/05/3-beers-1-mash-good-deal.html
