Making Craft Beer Ice Cream

    So this past Christmas I received an awesome Cuisinart Ice Cream Maker. It was only a matter of time before I started making craft beer ice cream. I found a great custard-style base recipe (meaning a shitload of eggs) that's good for tailoring your flavors. The trick is to find solid craft beers that you don't feel guilty making into ice cream. So far I've made:

    Old Rasputin Mint Chocolate Chip (with real mint simple syrup and minced mint leaves)
    Funky Buddha Sweet Potato Casserole (with graham cracker and marshmallow pieces)
    Terrapin Liquid Bliss Peanut Butter and Chocolate
    Oskar Blues Death By Coconut Cream Pie (with graham cracker pieces and shaved coconut)
    Founders Rubaeus French Truffle (with Ghirardelli dark chocolate chunks)

    And non-ice cream, per se:
    Lindemans Kriek Cherry Limeade Sorbet
    Anderson Valley Briney Melon and Lemon Sorbet

    Anyone got any ideas? I'd like to break out of the "chocolate ice cream and fruit sorbet" thing I'm in, but these styles are pretty forgiving for this kind of thing. If I could figure out how to do something with, say, Sixpoint Puff, I'd be glad to give it a go.

    Man those sound delicious. Especially the DBC one.

    It would be a challenge to sacrifice actually drinking it, but I bet BCBS somehow mixed with a vanilla bean ice cream recipe would be tasty.

    What a brilliant idea. I've ruminated for years over how to capitalize beer ice cream ideas, but you're the first I've seen to take it seriously. I've thought of a few ideas: A salted caramel nut brown ale ice cream, hefeweizen pretzel or cookie dough, and Belgian strong dark ale or dubbel/tripel/quad cherry ice cream.

    It's only a waste if OP doesn't enjoy it. It's not like he's throwing it away; he's still consuming beer, but he's having fun with it. You should try having fun sometime.

    Some combination of English barleywine and caramel sounds like it would be delicious.

    Not to speak for anyone, but I usually assume things like that are more harmless smart ass than serious criticism. As to the question, a coffee stout with either vanilla or chocolate and some more coffee sounds like it would work. I have a buddy with an ice cream maker that makes sorbets, usually peach or melon with some light rum thrown in for fun. Oh man that's tasty. Cheers!

    Guiness Ice Cream is remarkably simple and was quite good. If it must be craft you can probably find a substitute Irish stout.

    I suppose that a Not Your Father's or Coney Island root beer float would be too obvious, too simple, or possibly vile.

    A friend of mine makes Black Boss mint ice cream. Black Boss is a strong Polish porter and this ice cream is awesome!

    I read an article once about a place that serves and specializes in beer floats. I'm really curious what some of their ideas are.

    Until recently I ran a beer garden that was completely open air on the Florida panhandle. We did ice cream beer floats with vanilla bean ice cream. Porters and stouts were no-brainers, as well as some like Founders Rubaeus and Lost Coast Tangerine Wheat. I'd like to see different types of ice cream mixed with different beers, though.

    Awesome! If I didn't live on practically the opposite end of the country, I totally would have come there. But, I'll let you know if I come up with any particularly exciting and original ideas.

    I also have a Cuisinart ice cream maker and love making unusual flavors with it (ex: carrot; black licorice; smoked cherry chipotle). I've done 3 different beer ice creams: Shiner Bock, Founders Breakfast Stout, and a black IPA (Dark Side of the Hop). I haven't gone the next step and combined the beer with other flavors yet, but I am getting ready to try that in my next batch: Date and Dubbel (Westmalle).

    What about Springhouse Big Gruesome (chocolate PB Imperial Stout) with Reese's cups? Or even better - fluff and Graham crackers for a chocolate PB s'mores.

    Never really thought about making ice cream with beer, but I had a lot of shiner birthday (chocolate stout) laying around and reduced it down and blended it with syrup for waffles. Did you reduce your beers above when you made them into ice cream or pour them straight from the bottle?

    I've tried both ways. With Shiner and FBS, I just poured straight from the bottle. I tried reducing the black IPA, but that might have affected the taste. It was good, but on the whole tasted sweeter than I expected, and the hoppy taste was subdued. I can't say for sure that it had anything to do with the reduction, but I wondered about it. For what it is worth, I do plan to reduce the beer and dates together in my upcoming experiment.

    I also once made an ice cream from a Southern Comfort reduction, and that came out pretty well.

    now you have me thinking, I have some extra BW hanging around and some Jalapeno syrup, might be the makings for a nice sorbet with some lime added to it

    I recently got a Cusinart myself and Gose Sorbet is maybe the best idea I've heard for it yet. Can I ask how you incorporated the beer and how much you used? Not sure what size yours is but mine is the 1.5 quart model.

    I actually don't even remember; I played around with amounts and got something I liked, but never wrote anything down (rookie mistake). Pinterest is usually a good place to find recipes like that. I do know that simple syrups tend to work the best with the ice cream makers, whether you're making ice creams or sorbets. Fruited lambics are sweet enough to cut back on the simple considerably.
