Mixing beer and wine yeast

    I think you will be fine. Many of the wine yeasts are also used in brewing.

    You would want to stay away from Saccharomyces bayanus type of wine yeasts (Lalvin EC-1118, Red Star Premier Cuvee [blue] and Premier Blanc [yellow]) these are the killer type strains mentioned above.

    Red Star Premier Rouge is a Saccharomyces cerevisiae type of yeast and should work fine for beer.

    I think it will be good. Wouldn't surprise me if gravity drops a bit more but it's the first over 6% beer I've made. I've made wine stronger. I think it will mellow into a fine beer.
    Good to know that about that premier rouge yeast. I will go back to it if I mix beer and wine yeast

    You may not have meant to imply this, but I initially read the above to mean "cerevisiae strains are not killers."

    But there are several S. cerevisiae cerevisiae strains that are killers. Just putting that out there lest someone make that assumption.

    You are correct I did not mean to imply that and some of the Cerevisiae strains are killers like Lalvin K1-V1116 have what they call a "strong competitive factor" that inhibits wild yeasts.

    But I have noticed that every one of the commercially available bayanus strains are killers. This may not be true across the entire bayanus spectrum of yeasts. But for homebrewers it pretty much is because of availability.

    Update
    Gravity still at 1.009. It was bout twice as cleared as was before and tasted twice as good. I think I will bottle it tomorrow or wednesday. I think it was a success. It will be a good beer. Might have to test more yeast combos. Maybe the chico with a know killer and the premier rouge with a diff ale yeast to see how they all hold up
