Need recipes with Centennial hops (brown, pale, stout, IPA)

    Hi. My centennial batch is coming up. I don't know if this is a big deal or not, but I thought I'd make it a big deal and brew several beers using the centennial hops and call it the "Centennial Series" to give as gifts at X-mas.

    My actual centennial batch will be an IPA, maybe imperial/double, made with all Centennial (I'll call it "Centennial centennial" or something). Other beers in the series will be a brown ale, a pale ale, and a stout; each with some amount of Cent. hops in them. I already have a Centennial pale ale recipe called "Centennial Blonde" (Google it) and I thought I'd just take that and make it bigger and hoppier for the IPA (unless any of you have a recommendation).

    So, I need your help with brown ale and stout recipes. They don't have to be only Cent hops (not sure if only Cent would work in a stout), but I want Cent. hops in the recipe.

    Another thought is to have the series use only Cent. hops and the only difference is the amount of hops, malt/grains, and yeast. Or, maybe the same amount of hops in each, just added at different times. However, as I said, I'm not sure how using Cent. hops would do in a stout.

    I think HBT has a pretty popular clone of Bell's Two hearted that is all centennial. That might be a good jump off point for an IPA

    Makes a great smash, pale ale, or Classic American Creme Ale too (9 lbs 6-row, 3 lbs flaked corn, 25 IBUs with 2-3 oz late). :sunglasses:

    I made a tasty hoppy wheat with centennial earlier this year, inspired by (but by no means a clone of) Societe's The Pupil:

    80% 2 row
    20% white wheat

    I bittered with centennial, flavored with cent, nelson, and citra in equal quantities, WP'ed and DH'ed with 1:2:2 cent:nelson:citra ratio and in aggressive quantities for my gravity. WLP001 yeast fermented 65-66* for the first week.

    Pick your own IBU and gravity preferences. I honestly couldn't tell you what my water profile was for that batch, so pick your favorite hop-forward profile. Mine was up near the top of the pale ale gravity range, and it dried out a bit more than I had hoped making me wish I had carapils in the grist/up'ed the OG/mashed higher.

    Thanks. As for a stout, I know there's a recipe in "Brewing Classic Styles" that will offer a good starting point. I found a few recipes for the Bell's. I've never had or heard of it, but I'm willing to try anything once. BeerSmith has a clone of it with a higher gravity that I'll likely use (it's pretty much the same as HBT but more grains, more frequent hopping too).
