question on belgian witbier recipe...please help!

    So I got the grains needed for a belgian witbier I'm doing tomorrow. The guy at store helped me formulate the recipe. I know there is:

    5 lb belgian pilsner
    and there is flaked wheat, and regular wheat malt.

    One of the wheats is 3 or 3.5 lbs, the other is 1 lb. Which one would make more sense to be higher than the other? I am just trying to make sure that I have the recipe right (or as best I can). I also forgot to get rice hulls, so I'll have to be careful during the mash.

    A traditional wit recipe wouldn't have any malted wheat in it, just pilsner malt, unmalted wheat, and often unmalted oats as well.

    From this article:

    “Traditional recipes describe the grist as around 54% malted barley, 41% unmalted wheat, and 5% unmalted oats, though considerable variation was surely present (1).”

    I personally do not use unmalted oats in making my Wit beers. I use a 50/50 mix of Belgian Pilsner malt and flaked wheat (unmalted wheat).
