Saison and Pie

    On saturday i'll be hosting a Saison and Pie Day (beer list below).

    Other than Apple & Cherry anyone have any advice on pie choices? We're going to be baking them fresh.

    Quiche Lorraine, Lamb Shepards Pie, Chicken Liver Soufflé ..

    Chicken or pork empanadas, fish pie, mushroom & goat cheese tart.

    Familiar with Dupont, not the Americans, but am waiting to be convinced about saison with sweet pie. I was also thinking of a meat or fish pie or something savory. All that said, I would be there in about 12 seconds. A sour cherry can work something a bit Brett-y, why not. Going sweet, how about lemon or apricot to catch the citrus tang thang?

    They are saisons you can pair anything with them.

    Mincemeat for sure; be sure to use beef (or lamb) and suet in the filling. Maybe pecan - walnut might work better; try to find a recipe that calls for maple syrup as the sweetener. This meyer lemon shaker pie, maybe: http://www.thekitchn.com/spring-recipe-shaker-meyer-lem-47770. Squash could work, if not too sweet and not too heavy on the cinnamon - not pumpkin, use butternut.

    I would stay away from most standard fruit fillings if pairing them with saisons.

    The beverage (other than maybe hot coffee and a couple other exceptions) MUST be sweeter than the dessert for it to register on your palate in a way that you can fully appreciate it.
