Unlike "normal" palate fatigue, I find the effect of sourness to be pretty tactile, wherein not only does my sense of taste seem diminished, but it seems as such because it feels like a layer of tastebuds has been stripped off.

How does one do a tasting of these without scouring one's tongue? Spread the beers out? Drink the good stuff first? Suck on antacids?

Regardless of what it "feels like" the problem remains the same. Tastebuds and your sense of smell are hit by things that activate them and cause them to work hard. They need time and change to recover and reset. So get lots of water (spring water w/o chlorine is best) and unsalted crackers and pretzels to consume between tasting of different beers. Also order your beers by the impact they will have on the taste buds, least to most. E.g., I find Boon Oude Gueuze to be fairly mid compared to something like Hanssens or Cantillon.

BTW, You want to avoid cheeses and salted things since they are palate changers and not palate cleansers.

Drink water, eat food, have a bowl full of tums, and have a great time.

You might be feeling the additional "scouring" because sour beers are very acidic.
