    Run on background:
So I'm looking to grow something "noble," well of course close to noble, therefore the quotation marks. I currently have Cascade and will likely be adding Centennial as well. I think I desire a low AA option. Weird, but I don't feel I have any defined style of beer preference any longer; I appreciate a good example of nearly anything. Therefore, I am very challenged to provide meaningful feedback regarding flavor or style preferences and perhaps at the heart of the request for information is to understand versatility of Sterling vs. Mt. Hood. As a wild additional option, may switch the conversation to replacing Centennial for both Sterling vs. Mt. Hood. Any help clearing my illness of indecisiveness would be great hahaha.

    Questions:
    1. Which has greater versatility, Sterling or Mt. Hood?
    2. What beers have you used Sterling with success?
    3. What beers have you used Sterling with Mt. Hood?
    4. Would you replace Centennial for both Sterling and Mt. Hood?

Which do you like better, Saaz or Hallertau Mittelfruh?

Haven't used either much, in fact I've used Hallertau once. Think the real answer is I can't go wrong with either.

I like both varietys. Hallertau should grow well in Wisconsin also.

Sterling gives me a much better yield than Hallertau. Mt. Hood does even better, as it was bred to be more robust than Hallertau.

I'll cast a vote for Sterling. I had the hop. I moved and it did not survive the digging and re-planting. It has some Saaz character, but also some citrus qualities. Love the hop. Bees would fly over to the plant and cones hover and then fly away baffled, no joke.
