Strawberry off flavor in funky Saison

    So here is some background:


    Brewed a funky tart Saison with WLP 565 plus dregs of Sante Adairius, HF and Side Project, OG, 1.045, FG: 1.010. It sat for 3 weeks or so, then I split it into two 3 gallon carboys. At this point the beer was tasting great, and I wanted to fruit half of it. At that time I added 4lbs of fresh strawberries that I froze to one of the carboys. Today, 6 days later I smelled and tasted the strawberry one and it is getting the off flavor that I have seen from other strawberry american wilds. It is getting a plasticy/rubbery flavor and aroma.


    So, my question to you all is, what next? Should I leave it alone and taste every couple of weeks, add Brett C, add mixed culture of Lacto/Brett, Roselare? Trying to figure out how to save it, I can't stand this flavor/aroma in Brett beers and American Wilds.

    I say let it sit for a few months. Let the bugs metabolize those compounds out and clean things up.

    I say on any wild beer, if you dont like it right now, and you dont need to free up space, let it ride.

    It's just phenols from the Brett. Be patient.

    dump strawberries in there to cover up the off flavour

    Its the Strawberries. Every strawberry beer I have ever had, has had the exact same aggressive phenol that resembles tennis ball rubber and industrial cleaners...

    Might be something that not everyone picks up on though, based on reviews of some of these beers...

    Might be the LAC resin some berries are covered with, if you insist it isn't the Brett. Try organic or farm fresh berries and see if there's a difference

    This. Nearly every strawberry beer I've had his this plasticy/phenol character that tastes similar to the little strawberry seeds if you get one of those stuck in your teeth and then chew it individually. If strawberries are used, I think it need to be very sparingly, or you need to do something like use a juicer with a very fine filter that will remove the little seeds.

    Night shift does an amazing strawberry lacto sour, ever weisse and is quite pleasing...not sure if they filter out the seeds or not...but there has to be a way to eliminate that smell

    I'm not sure if it comes from the strawberries or the Brett, but I do know Brett can produce plastic, rubbery phenols. I've had it in my Brett beers before. Unfortunately I'm not sure if it ever goes away
