    Yeah, they're low risk so far. But already they've put on a dry hopped cask version of an okay beer, turning into better than just okay. Only guy I've talked to so far is the tap room manager, who wants to see some interesting shit but isn't a brewer.

    @ColdOne I'd echo what @UtisTheLaw said.

    We had a local brewery open here. Former brewer at Hangar 24, so had the chops making Pugachev's Cobra and whatnot. Really excited when they first opened, but all their beers were just kinda.. okay... Nothing amazing. Their pale ale was really drinkable but wasn't overly excited about their other IPAs and offerings. They just hit a year brewing and they are cranking out some really good beers now. They made a hazy IPA that was incredible. Did a DDH version of their pale ale that was awesome. Just released a Bourbon and Rum BA "Candy Bar" Porter (Cocoa, Vanilla, Coconut) that sold out instantly and people were lined up for.

    My guess is that the newer places start with easy, safe, approachable beers to get the non-beer nerds and then keep expanding to "riskier" styles or variants as they dial in the system and get a customer base.

    How long have they been open for? as a few others have mentioned above, I think most new breweries who don't have any hype already attached to them tend to do the standard offerings in order to be more appealing to non-beer nerds. this can help establish some regulars and generate a decent base of operating revenue. this way they can do more experimental beers...and if they don't hit, they're not a complete waste.

    Give them time, maybe talk them, and continue to support them if you think they're worth it.

    Cheers

    Yeah, I'd say it's good enough that I'll go grab a pint on the regular and support those guys. They already impressed me with a dry hopped cask, and it looks like they'll keep doing that.

    Mike--who/where is this? We're up there often enough that I'll put them on my list of places to check out.

    Liquid State Brewing, downtown Ithaca on the west end. It's been open 2 weeks. It's 2 miles from my house, so you'd pretty much have to hang with me if you went there. No bout a doubt it.

    I get all the bills. Not hard to pay when each one is $.05.

    The stamp is more than the bill itself. How much is a stamp nowadays?
