brewed 3 gal blonde yesterday- 75% pils 20% vienna 5% honey malt hopped with willamette & crystal. fermenting with 1056 building up a slurry for an upcoming smoked pumpkin porter. ended up being a terrible brewday (plugged in the pump to start the wort chiller, the hot out flung out of a bucket and up my shorts, scorching my gents). sample tasted good at least

Just finished up a 30-gallon batch of Classic Koelsch. Everything went as smoothly as possible -- even chilling from 200F to 64F in the SC Indian summer warmth. I'm exhausted, but at least I can rest easy knowing that I have all that beer (soon to be) fermenting away. Prost!

Brewday started off annoying, but got better. Overshot my mash temp and hit 165, added cold water to bring it down and overshot the otherway hitting 148. Got it up to 152, the up to 157. Efficiency was higher so I got an extra gallon of wort that I will add to a starter I made from local strawberries to see what I actually end up with from that yeast. It's chilling in the garage now and I will rack it tomorrow after work. Adding dregs from Hannsens Oude Gueuze and 3F Oude Gueuze in the next day or so along with some of the yeast cake from last year's Lambic (cultured from Blackberries). Burned my leg as well moving the keggle after the boil was done.

Not the weekend still but I just finished up brewing an Autumn Maple Ale. Ended up brewing by flashlight by the end of it.
