I recently started getting in to aging beers. Was wondering what everyones favorites are for aging?
Dogfish Head Palo Santo Marron
Goose Island Bourbon County Stout
Founder's Imperial Stout
De Dolle Stille Nacht & Oerbier Reserva
I'm aging a pack of FBS, kind of curious as to how it will turn out.
I have a low tolerance for extremely hot beers, so anything where I can clearly taste heavy alcohol I try to lay down to take the edge off. Otherwise I'd drink everything I have fresh if I could.
Getting some great recommendations so far...thanks guys!

North Coast Old Stock
De Dolle Stille Nacht
Rochefort 8 & 10
A. Le Coq Imperial Extra Double Stout
Courage RIS (remains to be seen if the new version will age as well as the old version...)
I've got a mini-vert of FBS dating back to '08, I'll let you know how it is.

Expedition Stout. It goes through drastic changes over the years, all of which are delicious.

So far my favorite have been Abyss and Anchor Our Special 2010.
I also love aging Palo Santo and Dogfish Head 120
