Honestly, I think this one is similar fresh versus 1-2 years old. It does mellow a little and gains a bit more complexity as time goes on.

I have never managed to hang on to any longer than than 2 years.

I did get a chance to try some 3 year old Illudium (same base beer but Cognac barrel aged) and it blew my mind.

A very nice lady who's been coming to where I work to have her vehicles repaired for about twenty years has been bringing me a beer or two every Christmas for the past five or six years brought me this today. She acted concerned as weather or not I would like it. I told her it was one of my favorites. I wasn't lying. Cheers.

Never kept any that long, how is it?

 

Stone Ruination dipa 8.5% with Centennial, Simcoe, Citra, and Azacca. Decent brew but not my favorite dipa. It has the right flavors but I think they could be blended together better. It doesn't taste boozy so I appreciate that. I seen they are revamping this beer once again. I'll probably give the 3.0 a try.

As we sit and sip beer and play “name the band” with every song that comes on, I’ve switched to an even more local brew, from DC Brau:


Sucked at photo, you’re missing Azacca and the “Way” part of Wai-iti hops along the 8 hop-varieties used in this Alpha Domina Mellis V.

The bartender strongly suggested a taste, as he apparently found it way to sweet. It is sweet with the honey - if even say more than I recall last year’s. It’s kind of like a 120 without the booze heat. The hops come through behind the honey opening.

IPA and Cheese, great combination!

 

Mellowed out, less alcohol heat. Still has a great barrel presence. Can taste some
oxidation indicating 5 years is probably too long to age. Plan on drinking the other
two in the pack within then next few weeks.
