Any of you chef types: Can you reduce a beer? This Nyx Falcon is crazy thick and sweet. It makes me think I should boil it down and pour it over something. It’s one of only a few beers I think are just…too much.

If you drink it, it will reduce. In volume. Not sure if this is the answer you're looking for. Cheers!

Guess its a testament to Founders KBS series that I'm hooked on every variant...
    Cinnamon Vanilla Cocoa KBS...

I thought Espresso was the best, but then there was that Maple Mackinac Fudge...
And now there's Cinnamon Vanilla - and let's not forget there is the original Kentucky Breakfast Stout, which I "technically" never had actually - it was already re-branded as KBS by the time I first had it in 2011 - and I wasn't even taking pictures back then lol... Anyways, fans of BBA beers, Founders, and/or big high grav stouts, you gotta give this Cinnamon Vanilla KBS a try - provided you're okay with vanilla and cinnamon in a stout...

Weird fact: vanilla or chocolate pudding, ice cream, cake, milk shake: I always go vanilla...

Did you know vanilla (the plant) is an orchid? Fancy!
Thank you, Red Dead Redemption 2...

    Shit I've been hearing...

If you think I'm not hip, you're outta your mind...

    Cheers...

At this point, I move kbs to one side then consider the variants. The base is so much more barrel-in-your-face that it stands apart from, perhaps not above, the others. I look forward to at least trying the cinnamon one next week. Like you I have loved them all. Cheers!

Used Troegs Master of Pumpkins that way [too much clove to drink it] , on an Easter ham. :+1:

Wet-hopped NEIPA, using new USDA experimental hop. Liking this a bit better on the 3rd try.:slight_smile:

...and we love the poor slob...

I never reduced beer like i might reduce a wine or liqueur but i have added beer to stews or sauces and let it cook down that way.

Its a very touchy thing actually. Since I was a chef in a brewery with free amounts of beer at any time I formulated alot of recipes and did alot of experimenting. In my travels without getting too complicated, which I never do I found pilsners and dark beers - beers with alot less hops- are the best for reducing. I had a house bbq sauce using our stout. I reduced it down but added a sweetener. That was decent. I also poached spaetzle in lager, made a beer cheese sauce etc. I guess my point is experiment but dont expect just a straight reduction to taste great.

SoS? Dude, it's legendary - and deservedly so. I've had it a bunch, and every time, I'm impressed anew.

CT BAs can get it pretty easily, thanks to the contract at Two Roads, so it's not a difficult beer to trade for, either - thankfully, given that the rest of Vermont's stalwart breweries aren't quite as well distributed.

Anchorage Brewing Co. -- Lilith's Brethren (imperial India pale ale)

    3.78/5 rDev -7.8%
    look: 4.25 | smell: 3.75 | taste: 3.75 | feel: 3.75 | overall: 3.75

Light yellow body, semi-hazy; huge head, dense and foamy, very sculpted; sticky, spidery patches of foam adhere to the glass. Malty nose with a sense of old, ripe citrus rind; pseudo-dankness. Malty flavor; old sugar and spice; kind of earthy herbal quality; slight hop bitterness; a little bit of alcohol presence. Heavy body; spicy stickiness; semi-dry overall.

Um, perhaps a bit old for this style of beer. There is a lack of 'freshness' in the taste, smell, and even the mouthfeel. It's not terrible, yet seems like a beer starting on it's last legs. Granted, it's an imperial styling, and it exhibits some of those traits, but they do seem tired. Rated with age factored in...

Poured at 51 °F; bottom of can data: LILITH'S BRETHREN 07/29/21

    ------------

...Mrs. BeerGoot is back from her supper and getting a COVID booster shot (she doesn't know if it's a half- or full-shot of Moderna)...I've been up since 3 AM wrestling with computer issues but surprisingly still going strong -- so, in honor of @vabeerguy - another shot of bourbon (A.H. Hirsch 16-Year)...one last disk partition to backup (probably will finish after I do go to sleep), so rebuild the laptop OS tomorrow...and probably more beer, more tuneage, and more weirdness...I'm good with this bizarro scenario...
