    Enjoying a drinking trip thru Belgium:astonished: , and I'm still in Canada :smirk:
    first up Hoyne Brewing 'Young Lions Abbey Style Dubbel' @ 7.0% (473 ml can)
    followed by Brouwerij Van Steenberge 'Gulden Draak Brewmaster' @ 10.5% (330 ml bottle)
    both new to me and very well crafted , prost :beers:

    Master Shredder. An IPA brewed by Veil. Picked up another four pack today at the local bottle shop. It is great now not having to drive to the brewery to buy some Veil brews.

    The chicken may look a little charred, but trust me, it was not. This was probably the best roasted chicken I've ever made - really delicious. The chicken was moist and tender and that chicken skin was out of this world. The mango chutney caramelized nicely which is what gave the chicken the charred look. I served it with some Mexican street corn.

    Many years ago i mentioned on a stout thread that this was a top ris especially for price and availability for me , and a fellow ba that I still remember but will not name said what a joke and was I crazy. Poor dude missing out.

    Here's the basic recipe for the chicken. You could also use 8 chicken thighs in lieu of a whole roaster.

    1 4-5 pound roaster

    6 TBSP of mango chutney - I used Major Grey's
    1 onion finely chopped
    2 tsp of minced garlic
    1 tsp curry powder
    1/2 tsp cayenne pepper
    1/4 tsp salt

    Preheat the oven to 425

    In a saute pan, saute the onion in a bit of olive oil until it's tender/translucent.

    Add in the garlic and cook for 1 minute - make sure it doesn't burn.

    Remove from heat, stir in the chutney, curry powder, cayenne and salt and allow to cool for a few minutes.

    Take the chicken and rub half of the chutney mixture under the skin, and the rest on top of the skin.

    I also stuff the cavity of the chicken with a head of garlic, ends trimmed off, and a quartered lemon.

    Place in the oven and turn the temperature down to 300 degrees - roast the chicken for 3 hours - turn the oven back to 425 during the last 15 minutes (this is optional).

    Let it stand for 10 minutes before slicing into it.

    Thanks, man! I bet the magic is the garlic up the ass trick. That always works for ... well, lots of things: bad first date, vampires, ending meetings early. Doesn't surprise me it's the key for this chicken dish. Cheers!
