What is your "go to" beer. A beer that has never failed you?
Mine so far is blind pig....
SN Torpedo. Or Pale Ale..

It's not necessarily a "go to" because of the high ABV, but Bell's Expedition Stout.
Seriously, every time I've had one it's been exactly what I've wanted from a RIS. Fresh, aged, whenever I'm in the mood for a thick, chewy, stout, it's there.

Ft. George Vortex. Hard to call a "go-to" since I don't live in Portland anymore, but that beer is solid no matter when, where, or how.

Another vote for SN Torpedo.
Exactly, and that's kind of why I am hesitant to name my favorite German lagers; I can see the possibility that they will not be at their best if I am not careful.
I gotta go with Rodenbach Grand Cru, then, all things considered.
Freshness issues aside:
Ain't no disputin', it's Old Rasputin
If i'm in Gainesville, where I'm from, Swamp Head's Big Nose IPA. If I'm around other parts of florida, or the brewery is closed and I'm at the liquor store, Jai Alai. If I'm around the country, Torpedo is a safe bet. (all of this is assuming I'm in my usual IPA mood, but I'm not always)

I'm assuming "never let you down" includes you being able to acquire it anytime.

Stone IPA. Can find it sometimes on the "obligatory" craft tap. Surprises me every time how it is exactly what I want.
