What Homebrew Are You Drinking - July Edition

    I know it's a little early to be drinking but I didn't post this last night so I'm starting the July thread.

    This is an Old Ale I brewed in 2010, aged in a corny and first tapped in 2011. I only drank it occasionally so in 2012 I bottled the remaining keg to free up space. It drank well in the bottles for awhile but eventually developed some diacetyl. In 2014 when the levels got to be undrinkable I opened the remaining bottles and added brett to see if that would help.

    Well here it is in 2016 and I cracked one open. And I can say it worked tremendously well. The diacetyl is gone and the beer has developed a very deep and complex sherry/port flavor. I was expecting some brett character but there seems to be none. It's almost like drinking a sherry it tastes so much like it. I only had a few bottles to doctor so this is a very rare product in my cellar. I think I'll save one for this coming winter.

    My newest batch of IPA. Lots of tropical notes, some pine and resin, a hint of citrus pith, with toasty malts and a touch of honey. Dry bitter finish after a medium creamy mouthfeel. CTZ in the mix and in the background.

    I call this, Smeagols Precious Oranges. Let me add a bit of context. We have a friend... we call him Smeagol. In this wheat beer there are oranges from his backyard. This beer is definitely tasty.

    Fort Point Pale Ale clone. It's not really as hazy as the pic suggests, though. Overall, I'm pleased with it. Will add bio-transform hops earlier next time around, and increase CaCl.

    Averagely Perfect American Stout, didn't toast the oats and I used us05. Missed the abv a bit so this one is more like a black ipa but still pretty good.

    So this is the grain bill, yeast, mash temp, and OG of the Averagely Perfect NE IPA recipe. Hops were Azacca, Mosaic, and Simcoe because that's what I had on hand. I really like where it's headed after only 3 weeks from brew day. I bombed it with hop additions at every stage. Glad I did. One of the best I've done. Dry at 1.010. Tropical nose and flavor with a dank backbone to balance it out and remind you that it's an IPA. Clean finish. Can't wait to brew the final recipe.

    I seem to remember quite a few BAs worried that the attenuation needed for 1.012 wouldn't be possible at 152°. Good to hear it's more than attainable.

    I mashed in at 152 but finished at 148 after 1 hour. Std Igloo cooler. So an average of 150 helped with a pH at 5.40 on the nose. Going lower on that best time. Blew me away that I was at 1.010 on day 5.

    Flanders Red that was brewed June 2015 using Wyeast Roselare Blend (great yeast/bug blend).

    Berliner weisse, fermented on apricots with Brett C, and dry hopped with mosaic. Tastes like straight up sour pineapple, mango and passion fruit. Around 4.5% abv it is hitting the spot on this warm afternoon!

    I got an infected bottle of their bourbon barrel smoking wood, complained, and got this same tulip glass. It's been a favorite of mine for years!

    After doing some brewing today (split batch explores different Brett strains), I went for my NEIPA, only to discover that the last draft from this keg happened yesteday. Seems I must have liked it. Hope @VikeMan soon finalizes the latest averagely perfect recipe -- I need to fill a void.

    IPA with Citra, Columbus, and Equinox, brewed 14 days ago. Kegged it yesterday and forced carbed at high pressure for 24 hrs. A little green, but happy with this one. Plenty of citrus and a nice dank undertone. Looking forward to seeing this evolve over the next few weeks.
