Kettle soured Kola Stout - turned out pretty weird but was compelled to try brewing it for some reason. Turned out to be mild on the cola flavor as the cane sugar cola syrup pretty much fermented out to completion (added after high krausen). Tastes like a tart porter with hints of cola flavor would honestly be really good in a bigger beer I think.

Just tapped a keg of west coast DIPA inspired by Gigantic IPA. Hopped with Equanot Amarillo and Crystal. 8.7 abv, nice orange color, super bitter, huge flavor

Also an imperial Brown Ale w/ centennial and Cascade drinking up nice in the fall breeze

Testing the pumpkin/coconut. The added coconut flavor is a little weird but it's drinkable. I'll try a another in a few weeks. Also need to triple the spices if i make another.

Drinking a black licorice session porter as well as my first crack at brewing an historic spruce tip ale.

It's been a while since I've had something new, but I finally cracked one of the dandelion beers after 5 weeks in the bottle. 4.5% and fermented with lab cultured sacch (3711) and cultured up dregs from a sacch/brett/lacto beer from Holy Mountain. 4 Month fermentation with dandelions steeped in whirlpool for about 5 minutes or so. 50% pils, 25% malted white wheat 25% unmalted wheat.

Carbonation is perfect with nice foam retention for a tart mixed-culture beer, lacing til the last drop. This is definitely one of the best mixed fermentation beers I've made and I am extremely pleased with how well balanced all the components are. Tart, dry, and herbal with a hint of tannins that linger in an extremely pleasant way making it seem fuller than it is.
