Obviously German beer would probably be best, but does anyone know what particular style, or even a beer from a particular brewery?

A hef would do, but for me Kolsch is the best with the sour. What meat?

I think I might be tempted to go with a Doppelbock, which for me would be Ayinger Celebrator.

Then I would stick with Kolsch. Some sauerbraten I have had is fairly plain, but some is seriously gingerbread cookies with cabbage mixed in. If you're not sure what you are getting, basic works.

The brewer at a pub here makes fantastic German style lagers, is married to a German woman and eats sauerbraten pretty frequently. I know he would say kolsch, but I think a good German pils or even a hefeweizen would be nice too.

I wound up buying Weihenstephaner Hef and Dunkel. Thanks for the responses.

Now I know why they call it "sauer"braten. Crikey that was harsh. Not a fan. Still paired well with the hef nonetheless.
