What's the proper tempurature for a cellar?

    I have been aging some BA stouts in the back of a closet somewhere close to room temp...is it going to do much - if anything to the beer?

    You'll probably want the temperature between 50-60 degrees, 55 being ideal. A little bit warmer and it probably won't do too much harm, especially if you aren't doing any super long term aging. What's more important is making sure that there are no wild fluctuations in temperature, so if the closet stays pretty consistant and is atleast somewhat close to cellar temp. you should be okay!

    I'm usually around 68. I've had great results. Just avoid light and fluctuations. You'll be fine

    Have you aged anything long term at that temp? Wondering because my basement is at around 65 degrees and I've got some stuff is like to keep for a while.

    50-55. 55 Being ideal as BlackElixir stated.

    Just checked last night and it's steady at 65 degrees...but always dark and no fluctuations. I plan on aging them about a year.

    I go with 57, it's in the range and that's the temp I like to drink a lot of beer at.

    I did some barleywines for about 6 years, turned out great.

    At a year you will be fine. My basement closet is about the same temp and I've had no issues at 3 years +

    I am at 50. That is how cold the cellar closet stays all year and it works well. I also have a fridge for fresh IPAs and such.
