something light in color and refreshing. Umm...Kolsch, probably a homebrewed version until I can get over there and try them properly.
something darker and with at least some roast component. Again probably a homebrew, but Edmund Fitzgerald would work.

If I could get those in top form at any moment, I would not feel like I was giving anything significant up.
