Beer and cheese are two of our oldest fermented foods and, as we say at Civilization of Beer, they grew up together on the farm of the human race. In this class, we’ll explore the history of both, and enjoy great pairings selected for the season. Samuel Merritt is the founder of Civilization of Beer, the consulting company whose first goal is to close the gap between beer and wine studies in the professional culinary community and return beer to its proper place at the American table.
