The Night Before Beer Dinner

Join us for a journey of beer and flavor concepts under the big top the night before the 2013 Southern New Hampshire Brewers Festival. This eight course dinner will be prepared by Chef Evan Hennessey and his team from Stages at One Washington in Dover, New Hampshire. The eight courses are designed around eight different beers from White Birch Brewing as well as beers from other brewers that inspire brewer Bill Herlicka. Each beer will be served in four ounce pours per course.

The Menu

Fried Damariscotta oysters, whipped honey, fennel marmalade, preserved lemon with White Birch Brewing Berliner Weiss

Sweet corn agnolotti, fresh tomato ‘salsa’, pecorino with White Birch Brewing Crown of Gold

Seared scallop with toasted & smoked faro, brown butter, braised onions with herbs, orange with Houblin Chouffe Dobbelen IPA Tripel

Smoked chicken ‘torchon’, local corn polenta, grains of paradise, glazed carrots, turnip puree with White Birch Brewing Belgian Style Pale Ale

“Cassoulet”, spiced with local peppers, pork belly, pork sausage, braised shank, local heirloom beans & onions with Bear Republic Hop Rod Rye

Dry Aged Duck breast, potato risotto, celery root, curried chiogga beet puree, baby golden beets with White Birch Brewing Hooksett Ale

”Thin Red Line”, goat’s milk cheese, cider-mustard sauce, petite herbs, apple preserves with Orval

Banana custard crêpes, salted caramel sauce, vanilla bean ice cream, almond-shortbread crumble with White Birch Brewing 4th Anniversary Ale

To end the evening, Bill and Evan are collaborating on a special small batch that will be served at the dinner only. You’ll have to come to the dinner to find out what they make…

This event is limited to 50 people with a price of $125 per person. Tickets go on sale, Tuesday, April 9, 2013 at 10 a.m. online only. Sorry, we wont have tickets available at the brewery.
