NEW BELGIUM's SOUR BEER SYMPOSIUM series is making its Chicago stop at Bottom Lounge on Nov. 15th to kick-off another wood and funk FOBAB weekend. The Symposium and Blending Workshop is hosted by New Belgium Brewing’s Wood Beer Blender/Brewer Lauren Salazar, and Wood Beer Specialist , Eric Salazar.

First, the sour beer faithful will be taken through the art of blending beers by Eric and Lauren, from grain to glass, focusing on the blender’s art and technique.

Then guests will get lost in the woods – blending their own sour beer using unblended base beer samples from different foeders kept in the brewery’s cellar, creating their own "La Folie."

The event will be held in the upstairs bar at Bottom Lounge with La Folie on tap plus some appetizers and charcuterie to nosh before we kick things off, both included with ticket. There will two sessions each lasting two hours with 50 guests per session. Must buy tickets ahead of time through Bottom Lounge.

1st session - 4-6pm
2nd session - 7-9pm
