Two Oceans is a tiki-inspired beer punch named after a spectacular mountain north of Jackson in Togwotee Pass. I wanted to integrate a lighter gin cocktail with Q Roadhouse & Brewing’s Trout Whistle, a moderately hoppy American Pale Ale. The spices from our house-made falernum blend with the juniper and hops to create a very bright and complex punch.

6 oz Q Roadhouse Trout Whistle American Pale Ale (or another Pale Ale, like Goose Island 312 Urban Pale Ale or Sierra Nevada Pale Ale)
6 oz Beefeater Gin
3 oz Velvet Falernum
4 oz Fresh-pressed apple juice
2 oz Lemon juice
3–4 Mint sprigs

Combine gin, falernum and apple and lemon juices in shaker. Strain into punch bowl with crushed ice, and top with beer. Garnish with floating mint bouquet. Serves 4–6.
