To celebrate our Sixth Anniversary we're turning our attention to the states that make up New England. Six vibrant and bountiful states that are rich in agriculture, history and texture. The New England region echoes the pride and purpose that we feel in our day-to-day here at Trillium.

The Six States is an imperial stout brewed exclusively with ingredients grown, processed and supplied by independent producers located in New England. We're proud to have each state represented in the recipe, making this beer a uniquely crafted tour through our little corner of the world. A variety of malts were sourced from Vermont, Maine, Massachusetts and Connecticut, including wheat grown in Maine then milled at One Mighty Mill in Lynn, MA. The hops were grown here in Massachusetts at Four Star Farms, and two varieties of honey finish off the list, hailing from apiaries in New Hampshire and Rhode Island.

MALT: Two Row from Blue Ox Malthouse, White Wheat from Peterson Quality Malt, Flaked Barley from Thrall Family Malt, Wheat Middlings from One Mighty Mill, Caramel Malt, Pale Chocolate, Roasted Barley and Munich Malt from Valley Malt

HOPS: Centennial from Four Star Farms

750 mL bottle from June, 2019. Poured into Trillium Six States glass and allowed to warm.

L: Small light tan head. Only leaves a thin ring and no lacing. Beer is very dark brown, but you can see a bit of garnet and chestnut at the edges.

S: There's not a whole lot in the nose, just some roasted malts and grains and a distant whiff of honey. Very faint and surprise because...

T: There is a lot of taste here. Definite unsweetened chocolate and caramel notes, a solid coating of the honey they used in brewing, and layers of roasted malts and grains. Slight bittering on finish, not much evidence of ABV.

F: Very drinkable despite ABV. Medium-bodied, no real carbonation to speak of. Flavors are nicely balanced and well-rounded.

O: Really nice stout, very subtle and tasty.

Skeptical going in for reasons that are solely my own - my palate is all fucked up. Imperial Stouts, from Russian to American to anything in between, sometimes hit me over the head with dark fruit-sweetness and umami that kill the beer. Other times they hit the spot. Go figure, but for this reason I tend to stay away from large format and/or pricey brews. Having just loved LOVED Color and Grain I decided to give it a go.

Long story short - it was too fruit-rich and savory for me too enjoy. The honey accentuated both characteristics. Take this review with a grain of salt for all you imperial stout lovers. I see the descriptor "tobacco" come up a few times in reviews and that's right on.

Charcoal body with a tightly packed khaki head that lasts for a couple minutes before fading away to near nothing.

Aroma is roasted malts, char, smoke, earth, tobacco, plum and dates. My palate is already getting overwhelmed.

The honey both balances the dark fruit-rich flavors and smokey savoriness with a grainy earthiness but it also adds to them.

Thick, full-bodied with a nice heft.

This was a really pleasant surprise from Trillium. I was getting worn out of the super sweet stouts and this was a nice change of pace, liked the honey as well.
