Our second collaboration with our good friends from Garage Project, South Pacific Soufflé is a full flavored imperial stout brewed with a number of dark roasted malts and dark brown sugar. To condition this special beer, we utilized Flight Coffee, Goodnow Farms cacao nibs, and luxurious Tongan vanilla beans. Rated alongside Madagascar bourbon vanilla beans as one of the best varieties in the world, Tongan vanilla beans offer a truly unique and bold flavor profile with a South Pacific flare. Nearly a foot long, our Fort Point brewing team hand scraped pound after pound of these vanilla beans to fully extract their rich aroma and flavor.
The end result pours an opaque jet black color with a khaki brown head. Swirling the glass, the nose is instantly welcomed by lush aromas of sweet vanilla cream, earthy dark chocolate, and rum-raisins. With each sip, layers of vanilla gelato, charred marshmallow, chewy dried fruits and mocha lattés wash over the palate balancing the sweeter tones with a gentle roast character. Medium bodied with a creamy smooth carbonation and viscous mouthfeel, South Pacific Soufflé has a long, satisfying finish that makes each returning sip a joyful exploration.

A super tight and creamy, two-plus finger tall, mocha colored crown topped the medium bodied, dark brown/black body. The head ever-so-slowly dropped to a thick, frothy, lasting collar. Patches and dots of lacing stuck along the glass.
The aroma was outstanding. Vanilla notes dominated. High quality, fresh vanilla beans specifically. There was a big powdered cocoa presence too. This definitely mimicked the qualities found in a chocolate soufflé. Nice rich malty quality too. Sweet caramel malts melded perfectly with just a hint of roastiness.
The flavor profile was also impressive though slightly less so than the nose. Malty and robust up front. Again, I picked up both caramel and roasted malts. Big vanilla notes appeared from the get-go and intensified as the beer moved along the palate. Good dose of powdered cocoa and/or raw cocoa nibs too. Some brown sugar appeared in the center. A subtle roastiness came through on the back end and the finish.
The mouthfeel was fuller bodied for the style but slightly thinner than I anticipated for a beer of this magnitude. A fine, fairly zippy effervescence made the liquid feel a bit over carbonated initially, but the carbonation eventually settled to a more appropriate level. With time, the body seemed to turn richer, fuller and creamier.
South Pacific Soufflé is another outstanding pastry stout by Trillium that was neither too sweet nor too boozy. Although I missed this on the first release, I am glad I had to chance to pick it up on the second go round.

Pours dark brown black with a minimal and fleeting light brown foam head, some sticky residue, not much lacing or retention. Smells absolutely rich and luxurious, like a decadent chocolate cake soufflé dripping with dense sweet coffee and vanilla cream, kinda just like the picture on the label. Super rich chocolate, creamy rich vanilla, dense rich coffee, subtle fruity notes, dark brown sugar, layers of cake, delicious chocolate soufflé dessert, pastries, pretty sweet, rich, luxuriant, chocolatey, all natural and just superb. One of the most rich decadent sweet dessert aromas I've smelled in any beer, like a popular brand dark chocolate bar. Taste follows with it's richness, decadent chocolate desserts, rich creamy vanilla ice cream, high end rich roasty coffee filling throughout, hints of dark fruit cut through a bit, slight blueberry, raspberry, plum notes, beautiful wonderful coffee on the side of dense rich creamy chocolate soufflé, dark brown sugar caramelization, dark caramel, fresh vanilla beans, it is definitively a dessert stout, though while sweet, rich and decadent to an extreme degree, for me it isn't too sweet or overboard sugar-wise, it just tastes like a rich chocolate dessert with a side of luxurious coffee, really nice. Feels medium-fuller bodied, creamy, smooth, slick, a little airy, bubbly, moderate low carbonation, lingering sweet notes, decadent chocolate, rich coffee, vanilla ice cream, desserts, amazing. Overall a really great imperial stout with Papua New Guinea vanilla beans, Flight coffee, and cacao nibs.

Pours black. Aroma is mainly sweet vanilla. Taste is mostly roasty malts, chocolate & lingering vanilla. Med feel. A very good stout.

Dark appearance with nice tan head that dissipates quickly. Aroma is a pronounced sweet vanilla and marshmallow. Taste is also a pleasant and pronounced vanilla and marshmallow.
