Collaboration with Horus Aged Ales

For our second collaboration with Kyle from Horus Aged Ales, we put our spin on his renowned coffee and hazelnut imperial stout, Goshawk's Grasp. Featuring a nine-hour boil and treated with a ridiculous amount of chopped hazelnut and Geisha coffee, we're proud to offer an intensely rich beer built for holiday celebration.

Pouring a deep brown color with a caramel-tinged head, Northern Goshawk wastes no time in displaying its profoundly nutty aroma. Notes of milk chocolate-covered hazelnuts, freshly roasted coffee, molasses, and brown sugar are immediately present. A full mouthfeel with a satisfying sweetness is balanced by an underlying roast presence and touch of alcohol warmth, leaving each sip of Northern Goshawk supremely satisfying.

Beginning to fall off a bit, and having to dodge quite a bit of sediment throughout. Coffee flavor trending towards fruity and mildly roasty, with the hazelnut very subtle but imparting a touch of nuttiness to the profile. Beginning to oxidize a bit.

Served in a tulip

The beer poured an oily and viscous pitch black. A super tight and creamy, two-finger tall, mocha colored crown rose above the body. The head slowly dropped to a thick, frothy collar. Small chunks of sediment could be seen atop the liquid. A fat, clingy ring of lacing and some odd shaped patches clung to the sides of the glass. After each sip, a sheet of fine sediment could also be seen cascading along the glass.

The nose was solid but somewhat nondescript initially. Roasted malts were most apparent. Good amount of brown sugar sweetness as well. Creamed and sugared, medium roast coffee was also noticeable. Some milk chocolate too. The coffee presence intensified as the beer warmed. Unfortunately, the hazelnuts were undetectable.

The flavor profile was also impressive, though it too seemed to be lacking in hazelnut character. Rich and malty up front. Roasted and caramel malt notes came through strong. Good dose of brown sugar too. Creamed and sugared coffee appeared in the center. Bit of vanilla. The hazelnut was slightly detectable here. Lots of milk chocolate character as well. More roasted malt notes on the back end and the finish.

The mouthfeel was rich, thick and completely full bodied. A fine, fairly zippy effervescence gave the liquid a velvety soft plushness on the palate. This almost almost reminded me of drinking a milkshake. After a few sips, the liquid deposited a thick, sticky film on my lips.

Even though the hazelnut was very subtle, this Trillium x Horus imperial stout was still outstanding. Not only was the flavor profile super rich and rounded, but the mouthfeel was insanely big. I am really surprised it receives only better-than-average scores.

This is One of the best stouts Trillium has released to date. Creamy, sweet, chocolatey. It's like drinking a hazelnut oreo. I might have to pick up another bottle.

Pours black with dark brown edges and a creamy tan light brown foam cap on top with decent retention and lacing. Smells like fresh chopped hazelnuts, earthy, woody, nutty, lightly toasted, roasty coffee, dark chocolates, dark roasted malts, dark caramel, lightly sweet, some brownie, good balance of hazelnuts, coffee and chocolatey stout notes. Tastes incredible, so rich, dense and concentrated, great balance of flavors, it doesn't seem too sweet, roasty roasty rich coffee, fresh chopped toasty hazelnuts, marzipan, caramel ribbon, mochaccino, rich dark chocolates, charred brownie edges, toasted brown sugar, molasses, dark toffee, roasted malts, hint of dark dried fruit, with mild earthy herbal hop notes. The aftertaste is immense roasted dark coffee and lightly toasted hazelnuts. Feels thick, dense, creamy, medium-full bodied with smooth moderate low carbonation. Overall a real great imperial stout with hazelnut and Geisha coffee.
