Each February, the seasonal aisle of the grocery store morphs into a sea of bright red, heart-shaped boxes. Filled with an assortment of chocolate treats, the favorites always seem to disappear first. For us, that's the coconut truffle.
Comprised of a blend of bourbon barrel-aged components 1-2+ years, old, Barrel-Aged Chocolate Coconut Truffle pours opaque black, immediately presenting its array of chocolate shop aromas. Milk chocolate, toasted brown sugar, and molasses greet the palate up front, with notes of coconut, vanilla cream, and bourbon providing well-integrated highlights as the glass warms. Moderately sweet, with a viscous mouthfeel, this entry to our Dessert Series remains remarkably drinkable throughout. It is our hope that you'll share a bottle with someone you love this Valentine's Day.

Served in a tulip
The viscous, pitch black body was capped by a frothy, finger-tall, mocha colored crown that quickly dropped to a fine collar. In the glass, the liquid looked very oily and slick. There was no lacing however.
The aroma was outstanding. Chocolate notes came through big time. Chocolate fudge specifically. Nice punchy vanilla presence as well. Fresh vanilla bean perhaps. Quite sweet overall. There was a rich maltiness too. Roasted and caramel malts were noticeable. Big, boozy, bourbony notes were also apparent. Hint of toasted coconut.
The flavor profile was similar to the nose but boozier. Super malty and robust up front. Roasted and caramel malt notes came through strong. Chocolate fudge was also apparent. Boozy notes hit hard as the beer moved along the palate. Bourbon came to mind. Good dose of vanilla too. More roast and alcohol on the back end and the finish. Hint of lingering oaky barrel.
Excellent rich, creamy, full bodied mouthfeel. Super slick and smooth on the palate. The liquid contained a finely beaded, fairly subtle effervescence that worked perfectly for the style.
Barrel-Aged Chocolate Coconut Truffle is another fantastic Trillium pastry stout that is both sweet and boozy yet still surprisingly drinkable. Although the coconut was quite subtle, I would definitely seek this out again.

Pours dark pitch black with a creamy frothy brown foam head that sticks around for a while. Smells sweet and rich, first impression is toasty brown raisin bread, some dark dried fruit, rich chocolate, bourbon oak barrel, nutty brown sugar, some creamy vanilla, coconut chocolate truffle, after sitting for a few it literally smells like a chocolate coconut truffle candy like pictured on the label. Tastes like sweet rich chocolate coconut truffle candies, like a rich dark chocolate that still holds some sweetness, prominent creamy vanilla, milk sugar, fresh coconut, raisinets, dark dried fruit, bourbon sweetness, oak barrel, dark brown sugar, caramel, toffee, slight nutty toasty cinnamon swirl brown bread, really rich and luscious, luxuriant tasting, sweet yet not overboard for me, ultimately this ends up tasting like a sweet dark milk chocolate covered coconut truffle candy, with some interesting complex barrel notes complementing. Feels medium plus bodied, creamy, thick, viscous, smooth with moderate low carbonation. Overall a delicious tasting barrel-aged chocolate coconut truffle imperial dessert stout with cacao, coconut, Madagascar vanilla beans, and milk sugar.

Looks nearly still in the glass with a rather unsightly fizzy pale tan head. Barrel and chocolate character abounds in the aromas and flavors -- perhaps a little much so -- and there's a hint of coconut and vanilla in the flavors as well. Thick, oily mouthfeel. Bit pricey for the quality
