    Okay. I forgot to do a poll on target fermentation temperature. This of course would only apply to those who can control fermentation temps. Others can just do what they can do.

    This one will run partially in parallel with poll #31. I hope this doesn't cause confusion. Please vote in both.

    I recommend voting in the context of all that has gone before.

    For those looking ahead, at the end of this poll, I will publish 2 Versions of the recipe (one assuming pellet hops, and one assuming leaf hops). Each of those versions will have an all grain option and an extract plus steeped grain option. For a preview (the all grain with pellet hops combination), see this thread...

    Let's keep the threads themselves on topic to the question at hand (not about how you would have asked the question differently). I will not address methodology questions in the forum any more. I'm not going to risk having a thread deleted due to a flame war. If this irks you, please consider not playing.

    The Averagely Perfect American IPA Recipe so far...
    5 Gallons (into fermenter)
    Target ABV: 6.5%
    Target OG: 1.062
    Target FG: 1.012
    Apparent Attenuation: 81%
    Recommended Mash Temp: 151F
    Fermentation Temp TBD
    64 IBUs (per Tinseth Calc)

    Grain Bill:
    Two-Row Brewer's Malt (92%)
    Crystal 40 (5%)
    Carapils (3%)

    Bittering Hop:
    Magnum

    Flavor/Aroma Hop Schedule:
    15 minutes - Simcoe 0.5 oz, Centennial 0.5 oz, Cascade 0.5 oz
    10 minutes - Simcoe 0.5 oz, Centennial 0.5 oz, Cascade 0.5 oz
    5 minutes - Simcoe 0.75 oz, Centennial 0.5 oz, Cascade 0.5 oz

    FO/Whirlpool/Stand - Simcoe 1.0 oz, Centennial 0.75 oz, Cascade 0.75 oz
    Dry Hop - Simcoe, Centennial, Cascade, Qtys TBD

    I like to pitch cool (63-65) and let it raise to temp (68)

    90F as I feel the fusel alcohols really volatilize the delicate hop aromatics.

    Actual vote 68 F.

    Well, believe it or not, I'm going to brew this one TOMORROW!

    I can't start the maris otter / simcoe smash (that won the day in my own "what should I brew? poll) because I haven't decided on yeast or a hops schedule. My bro can't make the starter I need for my blonde ale in time, and I need to brew something! With dry yeast! This one will use dry yeast so here we go!

    If I'm a degree or two off of the "fermentation temperature poll" I don't really care. :sunglasses:

    Everything else will be done according to teh evul plan that's been decided on via polling! :rolling_eyes:

    I vote cool-in at 62, cap at 66, and let rise to 70 after 2/3 of fermentation. :grinning:

    Don't hate me, but I left the magnum hops at home when I went to my bro's to brew. (My hops are split into two freezers because one is full, lol). So I had to use bravo. :grimacing:

    So you're the first. Honestly, as much as I know it won't really change the end result too much, this bothers me. Why bother if you are going to change things on the fly. Then it becomes the Almost Averagely Perfect American IPA. BTW I'm quite a few months out from being able to brew at all. But I saw it as a chance to exchange beers with BAs you admire/respect and compare theirs with yours and vice versa. Small changes negate that. Do push ups.

    Hey, I'm out of the army now! Well, I'll do 20 push-ups. :grinning:

    It was an almost 60 mile round trip to go back for the magnum, and we didn't have anything else to brew, so I did teh evul deed. 20 push ups is less work and doesn't cost any gas money!

    I had a sinking feeling that this is where the debate would come in. I said 62 because (a) I don't like esthers in my pales and (2) I like to start cold and ramp up a little after krausen settles.

    Including the write-in, the mean and median are both 66F. Stay tuned for the recipes.
