    Hi All,

    I brewed a split batch of English Barleywine about 5 months back that half of turned out poorly. During fermentation the yeast (S-04, fermented @ 70 F, 25 million cells/ml) threw off some isoamyl-acetate that turned my bready/malty/biscuity barleywine into some what of a weird banana bread beer. I'm trying to decide what to do with this beer, as currently, I can't stand it, and have put together a poll below to help make my mind up.

    The recipe is below (Note 5 gallons available for adulteration; the 5 gallons fermented with WY1968 did not suffer this fate):

    English Barleywine
    OG 1.112
    FG 1.018
    20 SRM

    Crisp Marris Otter (82.5%)
    Simpson's Medium Crystal (5%)
    Simpson's Extra Dark Crystal (2.5%)
    Dingeman's Aromatic Malt (2.5%)
    Turbinado (7.5%)
    45 IBU Apollo (FWH) [1.3 oz]
    17.6 IBU EKG (10 min) [7 oz]

    Make some banana bread out of that banana bread beer. That'll get rid of about 2 beers worth.

    I voted to just leave it alone. Below is from the paper entitled:The chemistry of beer aging – a critical review.

    “Volatile esters introduce fruity flavour notes and are considered highly positive flavour attributes of fresh beer. Isoamyl acetate, produced by yeast, e.g., gives a banana-like flavour. However, during storage, the concentration of this ester can decrease to levels below its threshold level (Neven, Delvaux, & Derdelinckx, 1997; Stenroos, 1973) which results in a diminished fruity flavor of beer.”

    Seems like a perfect beer to sour, pitch a roselare or lambic blend, maybe some good dregs and let it sit for a few yrs. the high ABV may inhibit the bugs a bit, but it'll prolly sour up nicely.

    I voted "Leave it alone." One thing you can always count on banana flavor/aroma to do is disappear.

    A beer that big you'll want to get some age on anyway, so you may find that in a few months the banana is gone. However, if you still have those issues after a few months, I say freeze distill it into an Eisbock. I did that once with a failed cider that was chock-full of rhino farts and turned it into a wonderful applejack sort of concoction.

    'Twas for X-mas presents. No dicks in a box were available, so I went for six packs of dicks in beers instead.

    I turned a gift keg of crappy porter into an excellent sour by adding Orval and JP dregs.

    I guess I am with the add dregs crowd. I vote Orval, I did that with a very bland beer once and it worked out well.

    I realize bland isn't the problem here, just saying... umm...uhhh...

    / pours quart of freshly kegged Chinook WY3787 IPA and stares into space.

    I don't know a lot about Belgium styles, but I'd be trying to mate this with some sort of quad beer and it might turn out sexy.

    Im surprised it stayed around so long in his beer as it is! My Roggenbier has lost its banana flavor very quickly, its still good but not like it was when I first started drinking it.

    Hmmm... "weird banana bread" doesn't actually sound bad to me. How does it taste? Not knowing, I voted to just leave it alone but I also like simply adding some Brett to it as MrOH suggested.
