Pee in your primary and toss a cinnamon stick in your secondary.

Seriously I think the yeast to use is WYeast 3944.

    Something like:

    50% unmalted wheat
    40% 2-Row
    10% Oats

    OG 1.050

Add zest from 4-5 oranges @ Flameout

    WY3944

1/2 Tbsp Indian Coriander & 1 Tbsp Chamomile (and more zest if needed) added to secondary / primary once primary fermentation is complete.

Not exactly the Big Hoe, but a good wit will come from this...

As a general rule I hate clone recipe books... The last one I looked at had you cloning Duvel using pear extract for the pear notes... Not that this one is bad, just look at all their recipes before you buy into it hook, line and sinker...

It's been awhile since I listened to it, and some of the info was dated then, like adding unmalted AP flour to your wit for the haze, but it covered many of the areas you will need. iTunes, the brewing network podcasts, witbier show. JZ didn't do that show, but it will have some good info none the less, at least I think.
