    Why is DFH like Mae West?

    When she's good, she's very, very good. When she's bad she's awful.

    DFH has got to be the most inventive brewery on planet when it comes to trying to do authentic ancient beers with modern methods, and they make a few really stellar beers. Palo Santo tops the very, very good list. If you have a proper cellar, put a few away for a couple years, gets even more ridiculously delicious.

    I really like Palo, Rasion de Extra & Burton Baton. A WWS every now & then is enjoyable. I have some Imortale that I'm aging by design. The first one was ok but I thought I'd see what happens. Some Squall got buried under other beer and ended up accidentally cellared.

    60 or 90 can be welcome sights in hotel bars. 120 is unique; one every year seems about right for me. Beyond that I could get by without DFH.

    Fresh PSM is pretty rich and "syrupy". Can't imagine what 2 or 3 years would do to it. Not that I wouldn't mind finding out, of course!

    Tell me about it, I bought a four pack and an extra two singles just for 'aging'. Only have one left and really want to drink it at exactly one year old (in about two weeks). I really need to buy another 4 pack

    I always enjoy the Aprihop when it comes out. The 60 is too bitter for my taste but I definitely enjoy the 90 and 120 as well as the Palo. As a matter of fact, the Palo was one of my first craft brews outside of Sam Adams and has a special place in my liver. Although, I do agree that DFH's prices are little scary.

    I'm sitting on 3 Palo Santos at the moment. I really enjoyed my first and am looking to try the next few with a bit more age on them (if I can make it that long). Odds are I'll just end up buying more. It's possibly the easiest drinking 12% beer I've had. At that ABV, its smoother and softer that a lot of comparably alcoholic Imperial Stouts, IIPAs, etc. A really enjoyable beer.

    This one is great fresh,also shines w/some age.
    Def. one of the best brews they make,if not "the" best.

    I have a lone 2009 bottle left,when I last had one it was super smooth and not a peep of alchohol to be detected.

    Had Burton Baton on tap @ American Social in Fort Lauderdale and it was delicious. High octane though!

    yeah DFH is good beer, it's just their lineup is overwhelming and I think some of their flavorings overlap with some of their other beers. However, everything they make that I've tried I liked, although not being a hops guy I can't drink the 90 or 120 from the bottle has to be on tap.

    Interested to hear how people have fared aging PSM. Burton Baton is usually readily available, while PSM is a little more rare. I love both and keep Burton baton on hand at all times.

    This site says that Burton Baton can be cellared, but it isnt recommended for PSM. Is that just a misprint? Seems like they are similar enough that both could hold up.

    Haven't had palo in years! I started my craft journey with DFH, Burton Baton is one of my favorites from them and also Fort with 3 or more years of age on it.

    Just grabbed my first one after reading this thread. Come to find out, it's already been in the bottle a year.

    I'd say the opposite. I don't often like the taste of aged beers but PSM is definitely an exception to that rule. It almost requires age to turn into something awesome.
