I brewed a batch of pale ale Friday evening. Pale barley, golden light DME and cascade hops. This morning the airlock is bubbling away, so fermentation is working the magic. The plan is to rack to a secondary fermenter later this week and bottle on Memorial Day.

Gonna be pushing that one, eh? A week roughly from kettle to bottle?

Yep, 9 days. I check specific gravity going from primary to secondary fermentation and then again before the final bottling decision. At this type of fermentation rate and a 2 gallon batch size I find it's usually at about 80% attenuation after a week or so. I let some batches go longer, especially bigger beers, but I find anything beyond 9 or 10 days has diminishing returns in terms of additional fermentation.

    Happy Trails!

on Friday I brewed beer for the first time to celebrate home brewing becoming legal in Alabama. Brewing an English bitter - Maris Otter, Goldings, and Fuggles. What more do you need for good beer

This is what I like about homebrewing! Citra kolsch? Never heard of it! Where the heck are you gonna get one of those, except a homebrewer!

(now someone will point out a commercial citra kolsch that i missed, lol)

Tapped my Averagely Perfect IPA keg, tasting really nice. Also bottled my orange saison. Used 8lb of fresh squezed oranges along with the zest and Bell Saison yeast. Finished at 1.002. Can't wait for this to carb up in the bottle, tasted great out of the fermentor.

.. well, there's yeast all around us. Including, apparently, in certain people's beards :astonished:

I brewed a DIPA and a Belgian IPA saturday (10 gal of each). Split the Belgian and tried two different yeasts. Sunday I kegged up a carmel apple cider and bottled a malbec.

My club has their single hop IPA tasting event coming up, 17 different hops were represented last year.

We have 25+ signed up to do it this year and a local brewery made the wort for us to keep as much consistent as possible. Saturday was the pick collection date for the wort, and many of us just finished the boil at the brewery (luckily I finished before the rain).
