Recipie critique-American double stout

    Looking for feedback here, I have never attempted a stout this big before. Any help,with mash/ boil time would be helpful also. Thanks. Oh, recipie is for 5 gal batch.

    Big starter, rice hulls and I would keep the temp of the mash low.

    I would probably go with 1.5# of flaked oats, 1.5# of flaked barley, and 1# of caramel 80 myself. I also would also swap the yeast strain for either Nottingham (if you want to use dry yeast), or WLP007 myself. I'd also mash in the 152F - 154F range. Those are just my preferences though.

    What are your targets? OG, FG, ABV, IBU?

    I agree with "make a big starter."

    I'm no expert but I think the recipe would make a fine beer.

    I usually adhere to the 7% roast, 7% crystal, 3% black rules in designing great beers, however I like the toffee to come through so I usually hit 10% crystal split with 60 and 120. But that's me.

    Looks pretty tasty. I too would dial back the flaked oats quite a bit (and yes on the rice hulls - it's cheap insurance.)

    I did a 1.110 stout a couple months back and even with 5% oats it's still damn thick. Two packs of US-05 dry and it hit my target FG (1.030)

    Your grain bill looks fine to me, but those IBUs are pretty low. A stout in that range should pretty much always be approaching 100 IBUs and you have ~60. If you want it to be malt-forward then I'd say just up the bittering addition to get it to at least 90.

    Looks okay as is, I'm of the same thinking as koopa, I would do 60 and 120 Crystal myself.

    If you don't want to up the IBU's much, add some black patent in there. I like the acrid roast in there, that does keep the beer from getting cloying over time. I see you have the carafa III in there, assuming you want a smoother, less acrid bitter stout, right? I'd up your IBU's then, possibly

    Use half the oats you have in there, and mash around 150-151 I think.

    I just finished a RIS the other week, used a bunch of roasted barley and black patent, like half a pound of BP, 2# of roasted barley, 1# of C120 I think it was and half a pound of C60. 1.5# of oats in there with Maris Otter base. Not exact, but close estimates.

    Mashed for 90 minutes I think at 150. I like it semi-chewy, and I had tossed in a #1 of demerara sugar in the boil. Ended up around 1.125 OG for 5.5 Gallons.

    Used 2 oz of Nugget at 90minutes, and shot for mid 90's IBU's. Glad I did, as the beer is sweet in my first taste. I took a baby sip, as I haven't checked the gravity yet, but wanted it to be bitter as hell this early in the game.

    Thanks for the suggestions. I think I will up the bittering hops, and reduce the oats.
