If you don't have a cellar, why not?

    I drink most pretty quick. I'll keep a couple of bottles in the 'fridge for up to a day or two. Is that long enough to age and count as "cellaring"? Hard to let 'em sit much longer.

    Not enough money to buy beer that I want to drink that day/week AND to buy beer that I'd like to have hanging around.

    Seems like the OP didn't think about that variable.....

    I like the occasional Imperial Stout, Quad and Barleywine and would probably enjoy keeping a handful of bottles of those around, but the amount of money I set aside for beer doesn't allow for such purchases. I could buy such a bottle(s) and put it in "storage" but it would mean going without beer to drink that week.

    Too expensive.. I spend so much on beer already that it'll take me quite a while for me to build up a decent amount of bottles. When I buy special releases and stock up on stuff like Abyss, KBS and Parabola, it puts a big dent in my wallet. Some of those things go off for trading so I can get my hands on stuff I really wanna try.. It all boils down to the cash factor for me.

    I understand people certainly have less funds/more restraint/better self control/etc but I've probably got 40+ bottles in the 'cellar' just because I don't have the time to drink them all.

    I would say the majority of people who cellar don't have actuals "cellars". I wouldn't call my 500 bottles a cellar I would call it 30 boxes of beer crammed in the closet of a grown man with an employee discount and a spending problem. I will say some people just give more fucks than others. There are psychopaths out there who just want to drink beer.:grimacing: They don't spend shit tons of money to try every barrel aged imperial dry hopped what have you they just drink regulla ass beer you know those weird six pack things:astonished:

    Used to have one. Too many beers did not age well. For every beer that improved, three were infected/oxidized/developed carbonation problems/etc.

    Just not worth it.

    i don't think i have the need for a cellar. whenever there's a limited release for something i like, i'll go pick up maybe four bottles of each at the most and stick em in a box until i want to drink them within the next month or so. i'm not too into trading or have the patience for aging, so i don't hold onto them for any reason other than to drink in the near future or if i have something planned (bringing beers when i travel to visit friends, stockpiling for my bday, etc)

    i just ordered a bunch of 3F and Cantillon bottles from Etre Gourmet and i don't think they're gonna last more than two months in a box on the floor. beer is much tastier inside of me than in a room.

    Money.

    I don't have the money to purchase a separate fridge and run up the electric bill just to age some beer. Or buy the expensive beers that one would typically keep in said cellar.

    I have a cellar of beer because I have a cellar that is not very good for anything else. Nice to go down there on a hot summer day, and to cellar beer and wine, are its only virtues.

    I don't believe that many of the beers people cellar actually improve with age.

    And besides, I live in a Manhattan apartment = zero space.

    I bought a Fridge from Sears. Its was an amazing deal at the time (about 2years ago). Its almost Six foot tall and has five shelves that fit any type of bottle. I prefer the collection next to my bar. I spend alot of time in my downstairs and if I want to grab something its right there in a perfectly controlled enviroment. The humidity is low and the temp is around 48F. I totaly get the mass of people that could careless about keeping a collection of beers. For me I have alot of self control. I may not drink for 3days straight because i dont have the time to sit down and enjoy a great craft. For me I like to open the fridge door and say to myself im really in the mood for a stout or IPA, etc.... I grab what ever and move on.
