    I had no clue that they were pasteurized. Thanks for clearing that up. Now my two cases of 2012-13 La Folie aging downstairs has no point.

    Yeah the flavors could change since it still has some house yeast... but since there aren't any wild critters in there it's not gonna evolve or become more sour. You could keep a couple just to see what happens but I personally wouldn't age them.

    I believe they still throw some yeast and priming sugar in to bottle condition. It's just not the cornucopia of bugs that were in there before.

    Thanks all for the information and lively discussions here. That being said ANY beery changes flavor over time as different chemical compounds, from acids, to alcohols, to oxygen/nitrogen gasses mingle and change chemistry. So all beers will change flavor over time, not saying it will be in a good way. From my personal experience I can tell that beer change dramatically, even if pasteurized. Should be interesting to try. Even if they do pasteurize the recipe changes from year to year and having verticals is an excellent chance to try out a brewer's/mixer's tasting profile. Peter Bouckart (sp?) knows what he is doing with these beers. Got to try La Love and La Terroir a couple years ago at Falling Rock and it was an amazing experience to try to 2-3 beers that equaled a ten. Look forward to trying these beers and thanks again for the info.

    Not in my experience. Past time we opened an 06-08 was about a year ago. They were all drinking spectacularly, although the characternof those C&C was very different fromnthe current La Folie, imo. I find that the current version is more sour and slightly more acedic, while the old ones showed more barrel character, had some more stone fruit and mineral flavors, and developed decent funk with age. The old ones are still really sour, but the sourness has more depth, if that makes sense. Just my experience, and there are folks from Colorado who have drunk a lot more La Folie than me who should chime in.

    It was good to read everyone's comments. I've only had La Follie for the past two years and must say it is one of my all time favorites among any beer. '13 was better IMO. Any chance of them ever bringing back Le Terroir? Seems like I just missed out on that one and it got exceptional reviews. I'd like them to bring it back, especially considering the rest of the Lips of Faith series is largely underwhelming.

    Did you ever have Eric's Ale? I wish they'd bottle LOVE Felix, I have a feeling it may be coming...It's basically Le Terroir.

    Soapbox: New Belgium upsets me how they have some GREAT (A+++++++) beers, but very rarely bottle them and convolute the rest of the LoF series with mere shelf filler... I'd pay good money for C&C New Belgium Sours, I think they're missing a lot of market share as they have the "original" sour program and fantastic recipes.

    I lucked into an Eric's ale tasting (beer and food pairing at GABF with Peter Bouckheart (SP?)) one year. I agree with every thing you have said though (from my limited, though dedicated, exposure to these brews). Thanks for the commetns, cheers!

    Bottled. Also, I had a '06 two years ago and it was FANTASTIC, but still needed another 5 years or so...

    No I haven't, but reading the reviews just now made my mouth water. New Belgium is definitely capable of more in my opinion. I mean their head brewer was a co-brewer for Rodenbach FFS right? If anyone could make a decent, but not superb sour for $9.99 a bomber it would be New Belgium right? I would buy one every month instead of 4-6 times a year.

    From a sales standpoint I think New Belgium is selling their beers as fast as they can brew them (we will be receiving them in Florida soon!). And they are building a new brewery (hopefully a new sour barn too?!?). I agree on buying them once (or six) times a month if available though. If they CC'ed though I would be even more tempted to buy a case a year to put away. I guess it is a good point to remember why they call it La Folie (the folley) as they lose money on every bottle they sell at the price point they offer. Promotional beer only.

    The only way a pasteurized beer benefits from aging is oxidization. Whether that's a good or bad thing is up to you.

    Hmm, I did not know they were losing money. They need to rachet up effieciency then! I can get a Rodenbach Grand Cru 750 ML for 10.99
