If you're going to post a bottle limit/person then the best thing you can do is hand out tickets or numbers so that those that show up late don't wait in line for nothing. This happened to me at Crooked Stave and I wish I had known so I could have left the line and started drinking at the bar. Cash only is a good way to speed things up if you post ahead of times that this will be the case. Another good idea would be to sell the bottles in a separate location from other beer related activities.

 

He did warn everyone, people were just talking while he was doing it. I heard him, I just didn't have any bottles I needed to take.
