Who's Brewing? August 1-4 Edition

    Do not be surprised if you are brewing a ton of beer in about 6 months due to an outbreak of baby showers:flushed:.

    I just kegged a session IPA with all Chinook. Perhaps keg a Legacy IPA if it ever finishes, damn slow out of the gate BRY-97.

    I have the grain ground up for a Porter. That will give me starter wort for a different Porter experiment. I would have brewed the experiment but I did not grow enough yeast.

    Snuck my "weekend" brew in this past Wednesday after work. Belgian Wit with homegrown coriander.

    Careful with the lactic acid. I would add it by the drop the a measured sample so I would know exactly how much to add to the final beer.

    Brewing a doppelbock on Saturday. It's going to be a long brew day. Doing a decoction, for one thing, then a 90 minute boil, plus I'm going to be dropping the wort onto the yeast cake from a pilsner, which means I've got to transfer that beer to a cornie for lagering. Etc. But I love a good doppelbock, and that beer's going to taste pretty damn good around the holidays. I'm already picturing bringing a growler to Xmas dinner at my sister's.

    Brewed a Kolsch yesterday, brewing a sour saison today, a berliner tomorrow. Trying to decide if I'm fruiting the berliner, not sure yet.

    I performed that test earlier this week. 1 drop vs. 3 drops in 3oz of beer. Preferred the 1 drop mixture as it didn't cover up the peaches as much. The 3 drop version was a little too aggressive.

    I'm estimating (will measure this weekend) I have about 4 gallons of beer in the carboy with the peaches.

    1 drop = ~.05ml
    4 gallons = 512 ounces = 15141.6 ml

    I preferred the one drop solution which was .05ml lactic acid per 88ml (3oz) of beer. If I'm doing my math correctly, that should equal about 8.6 ml of lactic acid, which is just under over a half tablespoon. Glad I crunched some numbers! :wink:

    Sunday it will be a 5-gal BIAB batch of Bee-52 Belgian Blonde, made with locally-produced honey.

    Kegging 5G French saison, pitching a house sour culture into 5G of Belgian saison and brewing 10G some kind of IPA.

    Two things...
    1. Bottling whatever it is that's been lurking in the fermentor the past three weeks.
    2. Starting a starter for whatever combination of grains and hops I'm abusing next Friday.
    3. Enjoying bottles of whatever it was brewed two to three months ago.

    Finally after weeks ago harvesting Conan it's time to brew a DIPA. Brewing NB 115th Dream Hopbursted, but the Conan and I'm also going to dry hop with 1oz Amarillo and 3oz Casecade. Yum going to be good and be my biggest beer to day.

    Just finished a small saison with ECY14. Added some oak to the fermentor too. Pretty excited to see how it'll turn out.

    Yup! Pitched the Conan at around 3:30 or so and just finished cleaning 15 mins ago. Now I'm just waiting for the bomb of active fermentation. My OG target was 1087 and my tested OG was 1084, so pretty happy with that part. My plan is to of course harvest the beast and I'm going to share the love with local MKE brewers.

    So if you're a Milwaukee brewer I'll have Conan in about 2 weeks and I want NOTHING for it, but for you to enjoy!!!!!

    Bottled my peach berliner up this afternoon. Underestimated the volume in the carboy a bit so i underprimed (shooting for 3 volumes, hit 2.4), but the lactic acid addition seemed spot on taste wise (aka..the peaches still shine through).

    Began a starter from dregs of a bottle of Crooke Stave Vieille Artisanal saison. Hoping to step it up a few times and then use it in approximately 2-3 weeks for what will be my first saison.

    I did the signpostbrewing.com Heady clone (version 4) last night/this AM. 1.5 liter Conan starter and 12+ oz of hops in the brewkettle. Version 3 was damn close so I'm interested to see how this one turns out.

    I also kegged a Warrior/Columbus IPA with S-04. I don't have the highest of hopes for it, but I'm looking forward to seeing how it turns out.
