I dunno....I guess it's "their thing" and what their customers currently demand, but I'd certainly get bored to tears as a brewer.

For instance, my favorite beer right now is pseudoSue from Toppling Goliath. They currently operate on a 10 barrel system (though they just moved into their new brewhouse last Friday, which is 30 barrel, but aren't brewing on it yet), so their capacity is even a bit lower than The Alchemist as of now. Even though pseudoSue is probably their most popular non-BA beer, I'd be pissed if they dedicated their entire brewery to only producing it...just to keep up with demand of their customers (who are very rabid about it). Instead, they still continue to produce many other beers, all of which are great as well. I'm assuming The Alchemist had other awesome beers as well, before their brewpub flooded. Why brew just one? Is it money related? I'm sure there are customers who would love to have access to some of the beers they used to produce (which it sounds like will be happening soon...through growler fills).

What is everyone else in it for? Supporting themselves?

Do you know how you make a small fortune brewing craft beer?

A: Start with a large fortune

To some degree I agree with that, but they are a NFP.

They get to use the word "surplus" on their balance sheet at the end of the year and not the word "profit." They do not stop producing beer in the month they cover expenses for the year.

You can beat this up all you want. They basically lost everything they had worked for and also felt a great responsibility for their employees who lost their jobs. They brew one commercial beer right now and no number of theories or postulations will change that.

Took the words out of my mouth.

If Mr. Kimmich shows the same passion in brewing other beers as he does HT, then I'm sure they will be out of this world.

Petit Mutant in tallboys, now that is something I can get behind. (Beelzebub would be a good option too)

And +1 to HT not being the best beer at the brewpub.

Celia. It's now made by Ipswich.

I had a bottle from a batch sent to MA. I remember it being not so good, but heard after the fact that there was an issue and the whole batch was recalled.

Q: Why does The Alchemist only brew one beer?

A: 1. Because they sell 100% of the one beer they brew without any problem, and.
    2. Because they can't make enough of that one beer to satisfy demand so why should they make another, and
    3. Because they sell enough of one beer to make themselves happy and make some profit as well.
    And most importantly
    4. Because they only want to brew one beer.

I had the good fortune of going to The Alchemist brew pub only a few weeks before the hurricane put an end to it. I actually remember thinking that their Holy Cow IPA was a better beer than Heady, and I would LOVE to see them brew that again. I also had Wild Child, which was a damn fine wine-forward darker wild ale.

They told me in February of 2012 that they were going to start having rotating beers for growler fills soon at The Cannery, but here we are a year and a half later with no progress on that front.

I think most brewers would scramble and get their beers flowing again ASAP if their facilities were wiped out like HT's were...gotta get the beer (and cash) flowing again or you're dead. But HT was in a unique position of having their shiny new canning operation ready to start pumping out their most popular beer. This unique position means they can take all the time they want to recover and/or plan for expansion. Why would (or should) they rush such an important undertaking???

Money is coming in (presumably at a pretty good clip) and they could just be sitting back, building up that cash for later. Then if/when they finally decide to expand they'll have the resources to go bigger than they would if they did it now.
