Mt. Hood/Centennial/Willamette Pale Ale

    Willamete is a great complimentary hop, goes well with just about any other variety. Not the brightest star on its own, but it has a sort of generic "hopiness" that tends to fill in the gaps. Though, a nice cream ale type thing or pale/amber ale carpet bombed with Willamete is potentially a thing of beauty.

    Yeah, this thing came out to something like 76 IBU. I cant remember exactly as I do not have the info in front of me right now but I know it's mid 70's so I would say that this is "a hoppy little bastard."

    Just reflecting on this post and wondering if gravity and ibu should go to the way side in that bu/gu ratios seem to mean more than ibus and gravity. I could see where what was considered. Malt forward ipa fits the mold for apa by the new american beer ideals and more hop forward apas fit the mold for what was once an ipa. Just food for thought as I am of the opinion that maybe the whole ipa name has gone too far.

    I'd agree with that. When I brew an "English IPA", it's basically a new school American IPA using English ingredients and maybe a little bit more crystal malt or some amber malt. The flavor paradigm for hoppy beers has definitely shifted towards more.

    That's just it, from the commercially available side DFH 60 min could arguably be considered an APA as far as a BU/GU ratio goes even though the gravity is higher than expected for an APA, and all these "session IPA's" seem to fit the bill for an IPA as far as BU/GU goes but the gravity and sometimes the IBUs put it into APA territory. Maybe I'm just crazy though. :rolling_eyes:
    EDIT: the style guidelines I am using for APA and IPA are BJCP guidelines.

    so...not sure what happened but I've got some ester-like flavors coming through with this beer. I'm guessing it's either my yeast washing procedure or my kind of higher fermentation temp (72-73F) that is the culprit. I tasted it after 6 days in primary when I was racking it to secondary. Maybe the esters will diminish over the next 2-3 weeks of conditioning.

    Anyone have any input on whether or not the esters will diminish?

    Other than that, the beer tastes pretty good, just more like an english IPA instead. Not what I was going for but definitely not terrible.

    Oh yeah, I used WLP Cali001 yeast washed one time.
