Has anyone seen any wine fridges that store bottles upright/vertically as opposed to the majority of them that are made to store the wine horizontally...

No, or at least I haven't; but you can customize them. I have used tile to replace the shelves, and since there are adjustable slots, you can just adjust the shelves to fit (you may need to cut the tile). There is, however, the argument of whether or not laying them down makes a difference to the end product.

AFA lying down vs. upright, I think it may only matter to bottle conditioned brews that have a bunch of yeast at the bottom (if they're upright). When you lay these down, the yeast begins to cake along the side of the entire bottle.... and makes it difficult to leave in the bottle when you're pouring, if that's your intention.

I converted a wine fridge using some basic wire shelving cut to exactly the width of the fridge. I looked into using tile or plywood, but wanted to make sure there was still airflow throughout. Just make sure you have very exact measurements.

Also, you may want to put some black paper on the inside of the glass window, just for extra light protection. You can get big sheets of heavy stock black paper at Target, Walmart, office stores and just cut it down.

Just buy a regular freezerless fridge. Turn the temperature to the highest (temperature) setting and it will sit at a nice temp for aging.

I'm thinking sliding glass door on a supermarket isle. No need for squiggly wire racks, just shelves.
