Top 3 Beers to Cellar (2013)

    tilquin quetsche aging = blasphemy! the fruit's subtle enough as it is in that near-perfect beer.

    First batch: agreed, one of the best ever
    Second batch: waaaay to fruity and needing some serious aging before it will be near as good as the first batch

    The more experience I gain with cellaring, the more I find that my favourite beers to cellar happen to be shelf beers, which is nice as it makes it easy to build verticals. My top three:

    Stone IRS
    North Coast Old Stock
    HotD Fred

    I'll add that, a week ago, I would have said Adam instead of Fred. Adam is an amazing beer with age, though it is just as good fresh (just vastly different). Fred, on the other hand, I had only had fresh and never cared for. This past weekend, I had the pleasure of drinking a bottle of 2009 Fred at the HotD tasting room and was blown away. There are lots of beers that I enjoy with age, but most of them I enjoy fresh as well. This is probably my vote for the beer that shows the greatest improvement with age.

    if you have 5 years to spare, olde school goes from shitty grape vodka to The God Beer.
