Aging Odell Wellspring

    Got the Odell Fall-Winter Montage yesterday - 3 of each: Wellspring, 90 Shilling, Isolation, IPA. I did a search on aging saisons, but found some mixed reviews - they seemed pretty dependent on the specific beer (didn't find any for Wellspring). Any thoughts on aging my other two bottles?

    i would not age the wellspring IMO, 2 saisons that i do age are Blvd Saison Brett and Bkn Sorachi Ace also have aged Anchorage Love Buzz

    Thank you for your response. I've never tried aging a beer before, so I'm appreciative of all the input I can get!

    How is Sorachi Ace with age on it? Like that beer a lot and get it whenever I see it on tap, but have always been kind of afraid to buy it in a bottle since I don't think there is a bottle date on Brooklyn beers.

    There's a Julian code on the bottles. Can't remember if it's on the bottom, neck, or label, but it's there.

    On the back label on the bottom is a julian code DDDY... with age on it its not as zesty hoppy but more lemon.citrus funk with slight hop i like it fresh and aged... 9 months is about all ive aged this one

    Nothing about the flavor profile or brewing stats of Wellspring suggests to me that it would age well. I could be wrong, though....

    A lot of the saisons that are good candidates for aging tend to have some brett in them that will continue to develop over time such as BLVD Saison Brett and Anchorage Love Buzz. That's not to say that a saison without brett or some form of wild yeast won't still be tasty after a year, but it may lose some qualities that made it great right out of the gate. It's such a broad category these saisons, probably why I love them so much.
