    With 6.5% ABV, what FG (and thus OG) do we want to target? I suggest thinking about residual sweetness, maltiness, body, and mouthfeel. Even though there is no (group) grain bill context yet, there may be one in your head. You may also want to be thinking about yeast strain and attenuation capabilities, even though there is no (group) context yet. Here is the formula I used to determine the potential FG/OG pairs.

    ABV = 131.25 x (OG - FG)

    I realize there are other formulae that would give slightly different answers. This is the one I used. But the bottom line is there are a finite number of pairs (at three decimal place rounding) that can result in a 6.5% beer and remain within the style guidelines. These are those. Because there are only 10 slots, I left out what I believe to be the least likely choices, given the style. These choices are...
    1.010 FG with 1.060 OG (83% ADF)
    1.011 FG with 1.061 OG (82% ADF)
    1.012 FG with 1.062 OG (81% ADF)
    If you want one of these, please write it in.

    When this poll is done, I will look at the data a few different ways to determine if there is a central tendency. It may or may not be as simple as a plurality would indicate. There may or may not be a runoff(s). It all depends on the data. This poll will be open for 48 hours.

    I went with 1.070-1.020 as I think the Cali Lager yeast would make an awesome American Stout. Cali lager IMO enhances the malts unlike any other yeast that I've used. It maxes out at 71%adf so I made my choice going off that.

    1.068-1.018 was my pick. Seemed reasonable enough and like something I'd likely hit with this style anyway.

    I'm hoping for Irish ale yeast as it's my favorite in malty beers. I went 1.072 to 1.022 to leave a nice body and sweetness. I know that yeast can leave the beer in that range pretty easily

    1.068 - 1.018 seems like the sweet spot, a little bit of chewy, but easy to drink, hopefully too easy to drink :slight_smile:

    An interesting bifurcation appears to be happening: dry vs chewy (for lack of better terms on my part). If this continues it will be interesting to see how it is resolved. Further down the road it will be interesting to see how choices in ingredients and/or process will be constrained so that the FG target is reached.

    I voted 72% but i would also be fine with RIS

    1.018 leaped out as the right choice to me (prior to reading any of the thread replies or viewing the initial votes) so I went with it.

    Went with 1.016, with the understanding that my stouts always come in a couple points higher than planned. Sort of like setting your watch 10 minutes ahead.

    1.070- 1.020 is my vote.

    I've got a stout that I recently did that was the same gravity, and man, I think it's right on target for a good old American stout.

    Ha, first think I thought of as well. That book is nearly worn out...my 2 year old has probably 40 books, but chooses to read the same 8 over-and-over-and-over.
