Leftovers beer recipe critique

    I have a few ingredients laying around that I would like to use up before they go bad. I was thinking about brewing the above recipe. Its for my brother's wedding, so it can't be too hoppy as its meant to be served to the masses, ha.

    The grain bill looks fine, but 2.5 gallons? Must be a small wedding. Simcoe would not be my first choice of hops for a beer for the masses.

    Also, grains stored cool and dry will keep for months if not years.

    Thanks for the response. It is a small batch, but most of the people at the wedding will probably be drinking BMC or liquor or wine. I also have 2 other batches along with this. Its a pretty big wedding though, over 300 people, ha.

    The grain is already a year old, so I'd like to use it sooner rather than later.

    I'd either up the bittering hops or mash low and slow to make sure it dries out. Not trying to be the crystal malt police, but 13% crystal with just 17ibus seems cloying to me.

    My recommendation is don't experiment with a beer that will be served at a wedding.

    According your given numbers you are going to get an OG of about 1047 and a bitternes of about 23,5 IBUs , I find this recipe very yummy.I would mash at 150 F for 90 min to get some dryness to counteract crystal malt sweetness, your yeast is going to contribute to get some dryness as well.

    So little hops to go with it? I know it's for a wedding, bmc drinkers etc, and simcoe is pretty piney stuff, but that still seems pretty low on the hops. That's also a lot of crystal, which will produce something pretty NON-bmc like. I would make a batch of my Classic American creme ale for the wedding, then up the hops on this one big time and make it for "beer drinkers" not "wedding guests."

    I'd brew it, but I'd also consider making other batches in addition to the other 2 you said you have. More non-beer drinkers than you think will be willing and excited to try home brewed beer. Especially if they are friends/family.

    My wedding was only 170 people, and with two separate bars each having a bmc tap and full liquor stock, 200 bottles of homebrew (ok, 199. I was a little nervous that day!) was gone about an hour after dinner ended.

    I have also found this to be true. The novelty of beer being made at home seems to pique people's curiosity so much, they can't resist. And if you're a good brewer, your beer will be popular, even if it's not a bud light clone. I have been quite amazed at how BMC drinkers quickly morph into homebrew fanatics when there's homebrew to be drank. :rolling_eyes:

    So far, the only one who hasn't had something good to say about my beer is my mother, lol. She's always curious to taste it but rarely says "I like that." She just doesn't like beer, particularly the bitterness aspect. I am betting that if I ever get the gumption to make a really good flanders red or raspberry lambic, she might like that. Maybe. I do appreciate the fact that she's not just telling me it's delicious to spare my feelings*.

    *I'm sure some people will do this both to me and to you. However, I actually prefer that people be honest and point out flaws in my beer so I can improve next time. If you tell people to be honest and not spare your feelings, you'll get better feedback. I suppose I have somewhat rigged the comments tho by always trying the beers myself before anyone else gets to try them. While I wouldn't offer bad beers to noobs or wedding guests, I also haven't really made bad beers either, just some that were better than others. Lucky me. Although I've probably somewhat rigged that too by sticking to the KISS method and not attempting anything too complicated.

    I'd say, "Do the brew." But I'd throw some more hops in to line it up with my own taste buds. That way, if the masses don't like it, I still have beer left for me!

    UPDATE:

    So I ended up only slightly tweaking the recipe. For some reason, my efficiency was MUCH higher than usual, and it ended up being ~6.8% abv and calculated to ~15 IBU's.

    Honestly, it is a bit sweet, but it was a hit at the wedding. One person from out of town asked me how to make it, I steered them in the direction of a LHBS :slight_smile:
