Hop Stand IBU Estimate

    So do most you guys add at flameout and start the timer? Or do you chill to a set temp and then start the timer? I'm thinking the latter, maybe wait until 150 and then stand for 30mins. Man, it'd be nice to have a counter flow chiller, just to have it out of the way. Oh well, future make along with a brewing stand build.

    I chill to between 160 and 170. Then steep for 20 to 30 minutes.

    I chill to between 110 and 125. Then steep for 30 to 45 minutes.

    I pull my hop spider, dump the boil hops out that are already in it, put it back (empty) into the boiling wort, chill the wort down to my preferred FO addition temperature range (110-125F), then add the flameout hops to the now empty spider. I mainly do this because I want to avoid any potential vegetal flavors from leaving hops in the brew kettle for an extended period of time, although I presume it's less of an issue once the wort is cooled down a bit. My real pet peeve (when making uber hoppy beers) is having any hops in boiling wort for longer than 30 minutes, although I make an exception for FWH'ing. I've even considered yanking my FWH's 30 minutes into the boil. Sure I'd sacrifice some extra bittering potentional, but I'm curious to see if the flavor would be better. Might have to try it some time!

    BTW: If your hop spider is made of plastic, make sure that you chill the wort sufficiently before attempting to put a lid on top of the hop spider. If not you could easily warp the spider and have it fall into your kettle. Also, if you chill your wort down as low as I do before adding your FO hops you don't need to cover your kettle during the hopstand as the volitale oils won't "flash off" at that low of a temperature.
